Recipe

With the start of farmers' market season, we're going to start a series of recipes that focus on local ingredients, many of which are available through farmers' markets and CSAs. Buying local food has so many advantages and we're lucky that New England is such a fertile source of a variety of foods.

In this issue we have a recipe for a crustless quiche. All of these ingredients are easily obtained from local sources. (See "Notes about the Ingredients" below.)

Crustless Kale Quiche

  • 6 eggs
  • 2 cups of grated Vermont sharp cheddar
  • 2 cups of cream or milk
  • about 1 cup chopped kale

Beat the eggs
Mix in the milk/cream, cheese, and kale
Bake in an 325° oven for about 35 minutes.

Notes about the Ingredients

Kale and eggs available now at farmers' markets.
Milk and cream from local dairies available at grocery stores, such as Don Otto's, Formaggio's Kitchen, South End Formaggio's, and City Feed & Supply to Whole Foods.
